How does the chamber machine work? When sealing with a chamber machine, the vacuum pouch is placed inside the chamber and the lid is closed. Air is sucked out of the entire chamber, not just the pouch itself. This allows air pressure on both the inside and outside of the pouch to remain equal and liquids to stay inside the pouch. The pouch is then fully sealed and air is returned back into the chamber. It is so amazing, you'll find a reason to use it every day!

Overall Impressions:

The VP215 is at the very upper end of home use vacuum machines, it's actually good enough that it could also be used in some smaller commercial applications. The first thing to take note of is that it is a chambered vacuum machine. This means that the entire bag goes into the machine rather than just the opening of the bag like a food saver type of machine. There are a few major advantages to that, first is that this is going to last a lot longer than a food saver type machine. With those machines you inevitably suck moisture up into the machine and as we all know, moisture and electronics are not a good mix! A chambered machine eliminates this worry and allows you to use vac bags to marinate cuts of meat and to seal much moister pieces of meat. The second advantage is the cost of the bags, yes the chambered machine cost more, there is no getting around that but depending on how often you use it you would be amazed how quickly you can make up that money with the savings in vacuum bags. For example the cost for a 1,000 8 x 12 chambered bags is 56.18 (and then there are quantity discounts beyond that) so they are 5.6 cents per bag. For 1,000 8 X 12 non chambered bags would be 144.40 meaning you are 3 times the cost! Now some of you might not go through 1,000 bags for a few years but they don't go bad and are easy to store! So those are the two major advantages of the chambered type bags, now lets talk about the unit itself. It is going to give many of the options you get with the larger commercial chambered machines at a fraction of the cost, including a vac gauge so you can see what vacuum you are pulling and an adjustable seal timer so you can set a longer or shorter seal time It is VERY well built, the motor and pump are both sturdy and with some simple maintenance it will give you years and years of great service. The only complaint is the chamber size, the max size bag it will fit is a 10 x 13 and for even a smaller commercial operation that might not cut it.
