What is Sous Vide Cooking

Sous Vide cooking uses water to get your product to a desired temperature and keep it there until it is ready to be consumed or finished. This is accomplished with a water circulator, like the Vacmast SV1 which keeps the water at a constant temperature. It is commonly done by vacuum packing your product to remove all the air from the bag so the heat of the water will be able to reach all areas of your food evenly. Air will act as an insulator in the bag so the best practice is to remove it but some people do use zip lock bags. The advantages of this style of cooking are increased tenderness, perfectly cooked food and convenience. You can set up your sous vide cooker and place your food in it hours ahead of time, once it reaches the temperature of the water it will remain at that temperature and is ready to be eaten, or if you are cooking a protein like steak or chicken, you can sear the outside of it for a minute or two and you will have a perfectly cooked piece of meat!

Overall Impressions:

The SV1 Sous Vide Circulator from Vacmaster is a commercial style piece of equipment that is designed to be used in your kitchen. Sous Vide cooking might seem intimidating to anyone who has not done it but with a circulator like the SV1 all you have to do is push a few buttons and you will have perfectly cooked food ready at any point of the day, I found it simple to use and made perfectly cooked steaks on my first attempt. The circulator has a commercial grade 1500 watt pump to keep the water at a constant temp and to keep the water moving, making heating the water and your product fast and easy. The SV1 can be set for up to 99 hour run times and will heat tanks up to 30 quarts anywhere from 77° - 210° F. The temperature adjusts by the 1/10th of a degree with the push of a button so you can be as precise as you wish to be. Once the unit is at the temperature you selected it will beep to let you know so you don't have to monitor it to see when you can add your food. After you set your timer it begins to count down to show you how long it has been cooking. Steaks were great after 2 hours but you can leave it in there all day and all that will happen is it will become more and more tender, you really shouldn't ever overcook another piece of meat again with this. For meats and poultry you probably want to sear it on a hot pan for a minute a side just to give it a nice crisp texture but you will still have a perfectly cooked piece of meat throughout!
