Overall Impressions:

This is a great smoker for home users who will smoke a lot or for commercial processors who want to use it for smaller tests batches without tying up their main smoker for long periods of time. If you are looking for a smoker to use as your main unit in a commercial setting this is not the best option as it has a limited capacity for commercial application. Having said that, this does an amazing job smoking and is simple to use. The PK100 gives a great look to your finished product, this is the smoker we use in all of our videos and it gives your product a great color and smoke flavor. The pan of wood chips sits on the bottom of the unit and rests on top of a heating coil which causes the chips to smolder and creates your smoke source. It comes with 5 racks that can easily be removed if you want to hang product from smoke sticks and is made of all 304 grade stainless steel. We took the Grilleye Bluetooth Smart Thermometer and used three probes with the clips and put them at the top, middle and bottom to measure the smoker for accuracy. We set it to 170° and checked an hour later and the top was 178°, the middle was 172° and the bottom was 174° which is pretty great accuracy for any smoker. It will smoke from 60-250 degrees and adjusting the dampers for changing between drying, smoking and cooking is very easy and can be done as you go. The digital controls make it easy to set the temperature and check on the current temperature without an extra ambient thermometer. Perhaps the best part of the PK 100 though is that you don’t need to clean the interior of the smoker. The more you use it and the more it builds up a seasoning on the inside the better it will work, so no long hours spent with smokehouse cleaner and a brush.
