High Temp does not melt like normal cheese during cooking and smoking and adds a cheesy and creamy taste to any sausage. Use 1 lb of cheese for every 10 lb of meat (or 10% of your total meat block).

Available in a 1 lb package or 5 lb package, plus other flavors like Cheddar, Hot Pepper, Mozzarella, Bleu Cheese, Swiss, and Provolone.

Overall Impressions:

High temp cheese really is one of the greatest inventions in the meat processing and sausage making world. Regular cheese just doesn't work right when put into sausages. Regular cheese melts, leaves no visual evidence of cheese existing in the product, and it leaves the sausage or meat product with a really greasy and slimy texture and mouth feel. With the introduction of high temp cheese, we avoid all the negatives of regular cheese and we create a really unique product with a great inside appearance. I usually prefer an extra amount of cheese though, so I ignore the generic usage suggestion of 1 lb per 10 lb of meat and I usually use almost 1.5 lb per 10 lb of meat. I usually make 25 lb batches of sausage, which then equates to somewhere between 3-4 lb of cheese.
