What is Dairy Blend Binder?
Meat binders assist in binding your meat with the water, fat and other additives together, the Dairy Blend Binder is Excalibur's version of a milk based binder. It helps binding as it has a strong affinity to water and it covers up the fat particles and prevents the fat from clumping up. The protein is then able to bind to each other around the fat and keeps everything bound.
