Bacon Taste Booster was originally designed when the vacuum tumbler was being introduced to small meat processors. The quick cure method tended to reduce the flavor profile that folks were accustomed to. Previously, they had flavors based on the old fashion method of dry rubbing. Therefore, Excalibur developed a seasoning designed to bring back that old fashion flavor, while curing bellies with the new, more efficient way of vacuum tumbling.
Use: Use 5 to 6 oz. of seasoning to 100 lbs. of bellies, plus bacon cure. Add taste booster to brine mixture.
Ingredients: Salt, sugar, spice extractives.
